Ingredients
- 3 tbsp organic gelatin (bloomed)
- 3 tbsp Kultured Wellness Sleep Tea
- 500ml boiling water
- Stevia or honey, to taste
- 3cm piece of fresh ginger
Method
- Bloom the gelatin. Place the gelatin in a small bowl. Pour over 4 tablespoons of cool water and allow it to bloom for 5 minutes, stirring occasionally until softened and expanded.
- Prepare the tea. Add the Sleep Tea and fresh ginger to a saucepan. Pour over the boiling water and simmer on a rolling boil for 20 minutes to extract maximum therapeutic benefit.
- Strain and combine. Strain the tea into a heat-proof glass jar. Stir in the bloomed gelatin and whisk until fully dissolved.
- Sweeten gently. Add stevia or honey to taste — just enough to make it comforting, not stimulating.
- Set the gummies. Pour the mixture into silicone jelly moulds or a lined baking tray. Place in the fridge until fully set.
- Cut and store. If using a baking tray, cut into small squares once set. Store in an airtight container in the fridge for up to a week.
