Frozen Coconut Mango Yoghurt Squares

A creamy, tropical treat for when it heats up! This recipe is from the Gutalicous cookbook that I co-authored with Jordan Pie. 

Packed with bifido and brain supportive fats, enjoy your Mango Yoghurt Squares as a snack, dessert or even for breakfast!

Ingredients: 

  • 2 cups fermented mango coconut yoghurt using our Kultured Wellness Yoghurt
  • ½ cup fermented mango pieces (chunks) - How to ferment fruit
  • ¼ cup MCT or Brain Octane Oil 
  • Stevia to taste 
  • Optional: ½ cup fermented cashews or macadamias, 1-2 tsp grated ginger

Method: 

  1. Combine mango coconut yoghurt with MCT oil and any optional add ins. 
  2. Mix through fermented mango chunks. 
  3. Pour into a glass container lined with parchment paper or silicon moulds.
  4. Place in the freezer to set. 
  5.  Slice into squares or remove from mould and enjoy! Store in freezer until ready to eat.
