Method

  1. Add all the ingredients to a glass jar and close the lid. Allow this to ferment for 12-24 hours.
  2. When it’s ready, you can pour the mixture through a fine mesh sieve to remove the passion fruit seeds and chunks of fruit, or simply pour the entire mixture into ice-block moulds.
  3. Place them in the freezer to set.
  4. When they’re ready, run the moulds under warm water for 30 seconds to allow the moulds to slide off easily.
