Serves 4-6


  • 1 leek, sliced
  • ½ bulb fennel, sliced
  • 3 celery stalks, sliced
  • 1 organic whole chicken (1.5 – 2kg)
  • 2 spring onions, sliced
  • 3-6 garlic cloves, crushed
  • 2-3 Tbsp butter or ghee
  • 1 knob of ginger, grated
  • Salt and pepper to taste
  • A handful of fresh herbs (parsley, sage, rosemary, thyme etc)
  • Filtered water
  • Fresh lemon wedges to serve


  1. Add the butter to a medium sized saucepan to heat on a medium heat.

  2. Add the chicken to the hot pan and brown the chicken all over until it’s golden.

  3. Now add the chicken to your slow cooker and add all the other ingredients to surround and cover the chicken.

  4. Add enough filtered water to just cover the chicken.

  5. Put the setting on low and cook for 6-8 hours.

  6. When ready to serve ladle the liquid and veggies into bowls with some of the chicken meat.

  7. Sprinkle with extra salt, pepper and fresh lemon juice to taste.

  8. Serve and enjoy!
