Healing Chicken Soup
Chicken Soup is such a powerful healing food and is perfect when you are not feeling well, or just when your soul needs some nourishing.
Serves 4-6
Ingredients
- 1 leek, sliced
- ½ bulb fennel, sliced
- 3 celery stalks, sliced
- 1 organic whole chicken (1.5 – 2kg)
- 2 spring onions, sliced
- 3-6 garlic cloves, crushed
- 2-3 Tbsp butter or ghee
- 1 knob ginger, grated
- Salt and pepper to taste
- A handful fresh herbs (parsley, sage, rosemary, thyme etc)
- Filtered water
- Fresh lemon wedges to serve
Method
- Add the butter to a medium sized saucepan to heat on a medium heat.
- Add the chicken to the hot pan and brown the chicken all over until it’s golden.
- Now add the chicken to your slow cooker and add all the other ingredients to surround and cover the chicken.
- Add enough filtered water to just cover the chicken.
- Put the setting on low and cook for 6-8 hours.
- When ready to serve ladle the liquid and veggies into bowls with some of the chicken meat.
- Sprinkle with extra salt, pepper and fresh lemon juice to taste.
