Our cultures are alive and active. They may expand in their packets and arrive bubbly or fizzy in the post, and they may have even leaked a little into the outside packet. All of this is perfectly fine and expected — it just shows how active they are.
The cultures are robust and stay viable at room temperature, so don't worry if they arrive warm. Once they arrive, pop them in the fridge if you're using them within a few weeks, or in the freezer if you need to store them for longer. Enjoy the process and have fun!
How do I know when my yoghurt is ready?
Two simple cues. First, the surface will be slightly firm and domed — not jiggly liquid. Second, when you scoop a spoon in, it holds its shape rather than pouring back. Most ferments are ready between 12 and 24 hours, depending on your coconut cream brand and room temperature. If yours is still liquid past 24 hours, give it another few hours on the bench — warmer kitchens speed things up, cooler ones take a little longer. The strains know what they're doing.
What if I mess up my first batch?

Can I use this with almond milk, oat milk, or dairy?
No — these strains are specifically formulated to ferment coconut fat, and they won't culture properly in other bases. Stick with full-fat coconut cream and they'll thrive.
Why AYAM coconut cream specifically?
Because we've tested it. AYAM 100% Natural Pure Coconut Cream contains no preservatives, gums, or fillers — just coconut. Many supermarket coconut creams contain stabilisers or emulsifiers that interfere with fermentation. Other unadulterated coconut creams can work too, but AYAM is the most reliable Australian-available option.
How long does the starter last?
In the fridge, up to 4 weeks. In the freezer, up to 6 months. You can also keep a small portion of each finished batch as a "starter for next time" — though after a few generations the strain diversity drops, and we recommend a fresh sachet to keep things full-strength.

Is it suitable for children?
